    Lime & Coconut Bliss Balls

    Lime & Coconut Bliss Balls

    Ingredients

    • 1¼ cups almond flour
    • 1 cup unsweetened shredded coconut
    • Pinch of salt
    • ⅛ tsp turmeric (optional)
    • ¼ cup honey or maple syrup
    • 2 tbsp lemon/lime zest
    • 3 tbsp lemon/lime juice
    • 1 tsp vanilla extract
    • Extra shredded coconut for rolling

    Method

    1. 1.Add all ingredients to a food processor and pulse until a sticky dough forms.
    2. 2.Roll into even balls (about 1 tbsp per ball).
    3. 3.Optionally roll each ball in shredded coconut.
    4. 4.Refrigerate for at least 2 hours before eating. Store in an airtight container.
    Chocolate & Pistachio Bark

    Chocolate & Pistachio Bark

    Ingredients

    • ½ cup melted coconut oil
    • ½ cup cocoa powder
    • ¼ cup maple syrup
    • Dash of vanilla
    • Handful of your favourite nuts, seeds, or dried fruits

    Method

    1. 1.Mix cocoa powder and melted coconut oil until smooth.
    2. 2.Stir in the maple syrup and vanilla.
    3. 3.Pour onto a parchment-lined tray.
    4. 4.Sprinkle nuts and seeds on top.
    5. 5.Freeze for about 1 hour until solid. Break into pieces and enjoy!
    Peanut Butter Chocolate Fudge

    Peanut Butter Chocolate Fudge

    Ingredients

    • 1 cup peanut butter
    • 2 tbsp honey or maple syrup
    • 2 tsp vanilla
    • ¼ cup melted coconut oil
    • 2 tbsp cocoa powder (for swirl)
    • 1 tbsp honey or maple syrup (for swirl)
    • 2 tbsp melted coconut oil (for swirl)

    Method

    1. 1.Mix base ingredients and pour into a parchment-lined pan.
    2. 2.Melt swirl ingredients together and drizzle over the base.
    3. 3.Use a toothpick to create a swirl pattern.
    4. 4.Freeze for at least an hour until set. Cut into pieces and enjoy!
